I love the hillbilly housewife website, so many great tips and recipes, especially when money is tight. I don't think all of the recipes are really that unhealthy, but as with any recipe, you can tweak it to make it lower in fat and add more veggies to make it healthier. But I agree that the people that are criticizing the recipes so harshly are people that don't have to worry about feeding their families on an extremely tight budget.

tofu is cheap, here in south. calif. its like 1.25, and there's always coupons for .25cent off, which they double at my grocery store.
its very good soy protein.
I but they extra firm, cut it in cubes, and sautee it with pam, then veggies,
then toss with soy sauce!
yum!

with the recipes from hillbilly housewife being from scratch.. how could you go wrong.. i would rather have a few extra grams of fat and go for a walk after dinner than eat things i can not pronounce. it is a give and take... i will take her recipes any day than eat some crazy things made in a lab.
