hello, i have to get food on thursday to last me until the following thursday, and i only have $40 CDN. i dont have a stockpile, other than oatmeal for breakfast, and i have to have healthy meals and snacks for the whole week. i'm just one person, so not a whole family, but i am wondering if this is doable? any meal ideas would be great. thanks!

Hi! There are many things you can make, especially if it is for only one person. I am not sure what the exchange rate is right now, but for $40 American dollars you can eat healthy for a week.

1.Pasta with tomato sauce or a little olive oil and sauteed zucchini sprinkled w/ Parmesan cheese.
2.Grilled cheese( I use wheat bread and low fat cheese) with tomato soup
3. Hummus sandwich -any bread with cucumber, peppers, etc.
4.Boneless chicken breast w/ brown rice($1 a box) and a frozen broccoli(tastes just as good as fresh, especially until it is in season)
5. PB sandwich
6. Buy fresh fruit in season and only what you will need for the week.
7.Yogurt (sometimes I eat this with a sandwich rather than fruit bc it is cheaper)
8. homemade pizza-sauce, lowfat mozzarella cheese, Pilllsbury dough(it is lowfat) and topped with a vegetable

Also, I eat lots of leftovers, so you would have enough for lunch or dinner the next day.

Tango has some really good ideas. I would add a pot of beans and cornbread will go quite a distance. You can top the beans with salsa and fresh onion for an added taste boost.

Cereal is good for anytime and so are eggs. There are lots of things you can do to an egg for a healthy meal.

Everyone came up with some really good ideas!

I also want to suggest buying something maybe a little larger portion size wise to stretch your budget more. One thing that I love to stretch is a whole chicken- first I will roast it, the leftovers the next day can be a carved chicken sandwich for lunch and for dinner you can have chicken tacos or chicken quesadillas (spelling?), the leftover the next day can be a chicken wrap for lunch or even make chicken salad and for dinner chicken soup (you can freeze the leftovers).

Planning helps out a lot in times like these, especially if you can get creative with leftovers! Check out the Kitchen section- they have a lot of great reciepes also in the Fitness forum there is a subforum just on healthy foods!

Pasta is cheap and you can eat it many different ways.

Good luck and tell us how it went.

Plan your meals and make a list before you go to the grocery store. 40$ for a week for only one person is doable.

Check the flyers. $40 is plenty if you buy what's on sale and plan your meals around it. There's some good sales this week, too.
