Clifford, Biscuit, and Arthur have Thanksgiving books that I used in my classroom. They may be a bit older than preschool, but still maybe appropriate. Another great one is Twas The Night Before Thanksgiving. My kiddos always loved that one! Albuquerque Turkey is good and so is I Know an Old Lady Who Swallowed a Pie.

ETA: I forgot to add Five Silly Turkeys.
