Thanks so much for all the suggestions! I've now got a lot of great ideas to start mixing in!

I've never actually made a meatloaf before, but have always wanted to try. Any chance you could give me your recipe?

my ds isn't big on veggies either. The ones he likes are stringless sugar snap peas, baby carrots cut in slices and cucumber. I just recently bought the juice that is fruits and veggies.... with each cup they get 2 servings of fruits and veggies. I only try to give him that once a day, but at least it helps!

I know my nieces would willingly eat veggies if they were raw and served with "dip." Cook them & forget it.

What about fruit? Will he eat that? What about veggies with dip? Will he eat the dip or no?

One thing I do when making muffins is add whole wheat flour so it is not all refined, sorry that was off the base question. Someone else had mentioned using dip with vegi's. I do daycare and cut up vegi's and serve them raw and give them ranch to dip them in, they all ask for seconds.
When I cook them I have I can't beleive its not butter spray and that is the special spray they all get to put on their vegtables and then they eat them.
Or I once had a daycare child that would eat their vegis if I sprinkled parm cheese on them.
If they are going through a no vegi phase just keep offering them to them. Try fruit insted for a while with the vegi's, give them a choice.
Or have them dish them selves up, then let them know if they take it they need to eat it.
