for a 2 yr old that won't eat visible veggies? Ds will eat them mixed in with other stuff, as long as he can't really see them. But as a side dish on its own, no way! What are good side dishes that I can add to what I am currently doing? Right now he has potatoes, rice and mac & cheese, all w/veggies mixed in. I just feel like that is too many starches though! What do you think?

You can take cauliflower and cook it and mash it just like regular mashed potatoes.

Carrot Pudding

4 large carrots, cooked and grated
1 small onion, grated
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 tablespoon sugar
1 cup milk
3 eggs, beaten

Mix together carrots, onion, salt, nutmeg, sugar, milk and eggs. Pour into slow cooker and cook on high for 3 to 4 hours

dd went thru a stage of eating mac & cheese 24/7. Then she went thru a stage of nothing but potatoes for 24/7. Then when she became a teenager, pizza for 24/7.

You're doing what I am basically doing, and some days it works and down goes the broccoli with the noodles and other days he looks at it and goes "ewwwww". If I just put the veg on the side, no way! I figure as long as he's getting some in from his starchy sides, then we're okay.

One of my tricks, is I take a can of chicken noodle soup (a chunky kind like Progresso) and drain out the broth. The veggies have been cooked in the broth, so he doesn't mind as much and since I drain the broth out the salt isn't too terrible.

Does your ds eat meatloaf? My ds LOVES meatloaf (that I make in the crock pot) and I can grate zucchini and carrot into it and he doesn't notice. When I make it, he gets priority on the leftovers so he can have it for at least one more dinner.

I also grate zucchini into his muffins. I make banana muffins or spice muffins and he doesn't notice (as long as it is finely grated with the excess water squeezed out). You could do this with carrots too and make a carot spice muffin.

Pumpkin muffins and bread are good too. Don't worry too much, toddlers and preschoolers can be really fussy! Just keep trying and realize that eventually they do get better.

Soup is a wonderful way to get veggies into my kids. Mine also really like edamame. You can buy it already shelled in the frozen steam bags at Target and cook it in 5 minutes in the microwave. Both of my boys love it. My youngest also loves carrots like that - we call it carrot souffle here. And don't forget about spaghetti sauce. It is a great place to hide veggies!

Have you tried giving him salad? My boys like it, but only with a couple of kinds of dressing.

My two were both picky as toddlers as well. Keep mixing as you are doing. But don't leave them off the side completely. Just seeing them there even if they don't eat them will be teaching them veges belong on there plate. That is what I did and when they got older they had to try one bite every time. Now they will eat a variety. Not as well as a cookie but they are getting them in with out a complaint.
