We think alike! I just posted about her veggies over in the toddler forum.
Let's see...I am trying to get veggie, fruit, and protein in each meal.
Her veggies so far:
green beans
creamed corn
creamed spinach
garden peas
sweet potatoes
fruits:
apple sauce
pomegranate sauce
bananas
kiwi
strawberries
For protein, I have done shredded grilled chicken, ham, turkey, and cheese.
Oh, breakfast is yogurt or cream of wheat with some fruit.
I use Cheerios, dried fruit (her fave is the dried apples), yogurt puffs, and whole wheat bread for her snacks.
I think that's it...probably a lot more than you really wanted to know.

You can tell I am probably over thinking this whole parenting thing!
ETA: Oh, I forgot to add steamed broccoli and cantaloupe. She likes those too.
