I would check with day care to see what foods they see him accepting.
Then I would basically do a baby-eating boot camp with different types of foods every day to try out the foods that he will accept. That should give you an idea of a menu that he will at least eat and then you can look at trying to work in your own dinners to his regimen. I don't think there is any way to avoid the "short-order" cook syndrome in the short term being that he is in a little bit of upheaval.

My DD doesn't like rib meat simply because it is too tough.

Try:

Cheerios
fruit pieces or slices (Moms even cut grapes in half)
raw veggies - my favorite is cauliflower because it isn't as much of a choke hazard like carrots and it is slightly sweet
hot dog slices - not rounds because he could choke but short wedges or half circles
cheese
yogurt

Let him chew on a mini-bagel, too.

I forgot about all those choke hazard foods.

When my picky girl won't eat anything else she always eats her yobaby yogurt. She would live on cheerios and gerber stars if I let her.
