Got this from the Soprano Family Cookbook & whole family loves it! Very economical too.
Serves 4

3 T olive oil
1 large red bell pepper, cut in 1" pieces
1 large green bell pepper, cut in 1" pieces
8 large eggs, beaten well
salt & fresh ground pepper
1 long loaf Italian or French bread

In large nonstick skillet, heat the oil over medium heat. Add the peppers and cook, stirring off, for 15min or until they are browned. Cove & cook 5min more until peppers are very tender.
Pour beaten eggs (with salt & pepper to taste) over the peppers & let them set briefly. Turn peppers & eggs to allow the uncooked eggs to reach the bottom of the pan. Repeat the stirring & cooking until eggs are done to taste.
Cut a lengthwise slit in break & pull out the soft crumbs from the center. Fill the bread with peppers & eggs. Cut the loaf in 4 sandwiches.
