Hey All,

Found a great book The Vegetarian Family Cookbook by Nava Atlas

Here is a recipe that has been a big hit in our house:

Filling:
1 Tbsp. olive oil
1 small onion, chopped
1 clove garlic, chopped
1 16oz can refried beans
1/2 cup salsa (as hot or mild as you like) OR 1 4oz can chopped green chilies
2 Tbsp. fresh chopped cilantro (if you don't have fresh, leave cilantro out)
1/2 tsp. dried oregano

Sauce:
1 1/4 cups milk (cow, plain rice or plain soy)
2 Tbsp. flour
1 1/2 cup shredded Montery Jack or soy cheese

8-10 corn tortillas, cut in 1/2
1 green onion, chopped
salsa
sour cream (or non dairy)

Preheat oven to 400. Oil a 9x13 baking dish.

Heat oil in pan on medium heat. Add onions and cook until translucent. Add the garlic and satue until the onions are golden. Add remaining filling ingredients, lower heat and warm through.

in a small saucepan, heat 1 cup milk, dissolve the flour in the remaining milk. Whisk in the flour/milk into the warm milk. Add 1 cup of cheese. Simmer sauce to thicken,

Line the pan with a single layer of corn tortillas. Pour in filling and spread to cover. Top with more tortillas. Pour sauce over the top. Sprinkle with remaining cheese ad green onions. bake for 15 minutes until the top is bubbly.

Serve righ away with salsa and sour cream to top.

This sounds good! I'll have to try it on my family sometime.

For enchiladas I've been sauteeing a little red onion and red bell pepper in a bit of oilve oil. Add to 1 can black beans that have been drained and rinsed, 1 can refried black beans, and 1 can drained corn. Put a couple of tbs in a corn tortilla. Add 1 tbs cumin and 1tsp chili powder to 1 can of green enchilada sauce. Pour this over the enchiladas and sprinkle with cheese of your choice. Very yummy and easy to bring to potlucks!

You could also make this as a casserole by using all whole black beans (too pasty with one can of each) and layering lasagna-style with corn tortilla "noodles" and enchilada sauce.

Oh - that sounds really good! I'll have to make it soon.

A quick question - are you the only veg in your house? My dh is an omnivore, my 2 ds are mostly veg, but dh still thiks they should have (be allowed to eat) meat. I was just wondering.

We've decided to raise the girls as vegetarians until they're old enough to make their own informed food choices. My dh is not a strict vegetarian, but he does feel it's healthier for us not to eat meat, so he's very supportive of me.

I'm also not one of those people who can just pick the meat out of my food. The idea makes me :hurl: I even have to have my own roasting stick for my little vegetarian hot dogs because I can't stand to have mine contaminated with meat juices. EEEWWW!!

How did you become vegetarian?

I was pretty young (10 yrs old) when I started cutting out certain types of meat (I tend to overthink it). By the time I was 14 I had mostly eliminated it from my diet. I can think of about 4 occasions since then that I have knowingly eaten meat (three times at other people's houses), but it's probably been a good 13 years since the last time, and closer to 20 years since I became veg. (I'm sure my parents thought it was just a phase! )

I was veg in college (many years ago ;-) I don't really know why I went back to eating meat, but I always knew I'd go veg again. 3 years ago my nephew and his girlfriend went vegan. My sister freaked out and he came to me for advice (what foods to eat, how to cook, etc). Talking to him about it got me back to being veg.

Dh agrees that it is healthier, but doesn't think that we should force it on the boys. My little one would rather eat cauliflower curry that mac and cheese with fish stix. His big brother however...... Although he thinks he is eating chicken nuggets when he is really eating chik'n - shh!

I am the same way about meat touching my food. If we go to Subway, I always order first (and have asked them to out on fresh gloves, because the though of meat on my lunch is a :hurl:

It drives my dad NUTS. We live in the South and he is always wanting to go to places that cook the veggies in bacon grease or with a ham hock in it. To him it is vegetarian. Be be fair, he has told me that he will be a vegetarian once pigs are considered a vegetable.

I made this over the weekend, and it was really good. My family didn't even notice the lack of meat. I did over cook it though, and my cheese sauce dried up. So only cook in the over for the 15 minutes.
