Farfalle Salad
(this is a recipe from my chef friend from church; she prepares everything to taste, so I just have the ingredients and a few notes.)
Farfalle Pasta (bowtie)
Sun-dried tomatoes (soften in hot water)
Fresh Parmesan cheese - 1/4 to 1/3 cup?
Garlic - 3 cloves, to taste
Olive oil, about 1 cup
Walnuts (2 handfuls or so)
Fresh spinach, slivered
Salt
Pepper
Pinch hot pepper flakes
Make pesto in food processor. Place cheese, garlic, hot pepper flakes, spinach, and sun-dried tomatoes in processor. Pulse a bit. Salt and pepper to taste. Add olive oil and walnuts last. Serve over bowtie pasta. Can serve warm, room temp or cold.
