Default Black Bean Quesadillas

This recipe is from my cookbook, Low-Carb snacks and appetizers. I make this for lunch and dinner all the time, my dh and I love them. I've been adding some refried beans on the bottom tortilla before adding the cheese.

nonstick cooking spray
4 (8") flour tortillas
3/4 C shredded cheddar or Mexican cheese
1/2 C canned black beans, rinsed and drained
2 green onions with tops, sliced
1/4 C minced fresh cilantro
1/2 tsp ground cumin

Preheat oven to 450 degrees. Spray large nonstick baking sheet with nonstick cooking spray. Place 2 tortillas on prepared baking sheet; sprinkle each with half the cheese.

Combine beans, green onions, cilantro and cumin in small bowl; mix lightly. Spoon bean mixture evenly over cheese; top with remaining tortillas. Coat tops with cooking spray.

Bake 10-12min or until cheese is melted and tortillas are lightly browned. Cut into quarters. Serve with sour cream and salsa if desired.
