1 (8oz)uncooked penne pasta
2 Tbs vegetable oil
1/2 lb portobello mushrooms, thinly sliced
1/2 c margarine
1/4 c flour
1 large clove garlic, minced
1/2 tsp dried basil
2 c milk
2 c shredded mozzarella cheese
1 (10oz)frozen chopped spinach, thawed
1/4 c soy sauce
Preheat oven to 350.
Lightly grease a 9x13 inch baking dish.
Boil pasta 8 min,drain.
Heat the oil over med heat,stir in the mushrooms, cook 1 minute, and set aside.
Melt margarine in the saucepan. Mix in flour, garlic, and basil. Gradually mix in milk til thickened. Stir in 1 c cheese til melted. Remove saucepan from heat, and mix in cooked pasta, mushrooms, spinach, and soy sauce. Transfer to the prepared baking dish, and top with remaining cheese.
Bake 20 minutes,til bubbly and lightly brown.
