2 c water
1 tsp salt
1 c lentils
1 small red onion, diced
1 c quick oats
3/4 c grated cheese swiss or jack cheese
1 egg, beaten
1/4 c tomato sauce
1/4 c bbq sauce
1 tsp minced garlic
1 tsp basil
1 Tbs parsley
1/2 tsp seasoning salt
1/4 tsp pepper

Add salt to water and bring to a boil,add lentils and simmer covered 20-25 min,til soft and most water is evaporated...drain and partially mash lentils.then let cool a little.
Stir in onion, oats and cheese.
Add egg, tomato sauce, bbq sauce,garlic, basil, parsley, seasoning salt and pepper.
Mix well.
Spoon into loaf pan sprayed with Pam.
Smooth top with back of spoon.
Bake at 350 30- 45 min til top of loaf is dry, firm and golden brown.
Cool in pan on rack for about 10 minutes.

You can also make a ketchup/br sugar or honey glaze for top or sprinkle w/extra cheese!

I made this also last night. We liked it, but it was a little dry for us. I was wondering if you have played around with the recipe at all? Let me know if you have.
