1 can whole kernel corn, drained
1 15oz can black beans, rinsed & drained
1 8oz jar salsa(i like hot)
2 c shredded colby-monterey jack cheese
1 10oz rotel tomatoes and green chilies
2 c cooked rice
1/4 tsp pepper
3 green onion, chopped
8 oz sour cream
sliced black olives (opt)
8 oz shredded monterey jack cheese

Mix the first 8 items.
Put into lightly greased 9 x 11 inch baking dish.
Sprinkle with the sliced black olives and shredded Monterey Jack Cheese.
Bake at 350 40-50 minutes.

Top w/sour cream and enjoy!!!:happy dance:

This was yummy. Thanks for the recipe. I used mild salsa, and I am glad I did. The spice was just right for me.

I made this last night and it was YUUMMMYYY. I think I'll use the hot salsa next time. Used medium and then realized, the kids wont eat it anyway, I should have spiced it up. DH even liked it -- surprising since it had no meat in it. Thanks for sharing the recipe... and keep 'em comin'!

This was delicious - even if I did not copy down the directions exactly right and mixed the sour cream in before baking! When we had leftovers the second night, my son jumped up and down! I'll definitely make this again.

This was delicious!!!! And so good the next day too! We are always looking for new meatless recipes so thank you! All 3 of my kids ate this which does not happen often! Yeah!!

Yes, I make a very similar recipe. Substitute plain yogurt for sour cream and don't use quite as much cheese but it is kid friendly and everyone I ever made it for likes it.
