...ooohhh this makes me miss Jillibean

........she loves garbanzo beans.....
2 Tbs olive oil
1 Tbs chopped fresh oregano
1 Tbs chopped fresh basil
2 clove garlic, crushed
1/8 tsp pepper
1 (15oz)garbanzo beans, drained and rinsed
1 large zucchini, halved and sliced
1/2 c sliced mushrooms
1 Tbs chopped fresh cilantro
1 tomato, chopped
1/8 tsp season salt
Heat oil med heat.
Stir in oregano, basil, garlic, and pepper.
Add the garbanzo beans and zucchini, stirring well to coat with oil and herbs. Cook, covered, for 10 minutes, stirring occasionally.
Stir in mushrooms and cilantro, and cook til tender, stirring occasionally.
Place the chopped tomato on top of the mixture. Cover, and let the tomatoes steam for a few minutes, but not mushy. Sprinkle w/season salt.
Serve immediately.
