I found this recipe the other day and was inspired to make my own homemade seitan. Here's the recipe I used, which is also found in the cookbook "Vegan With a Vengeance." I've NEVER had such good seitan before. I'm also quite sure you could use this marinade on other types of meat as well, if you weren't vegetarian. If you cook down the marinade a bit and glaze the seitan or meat with it.....so nice.
