28 ounce can of pinto beans,drained
2 cups of brown rice,cooked
dash of chili powder,garlic powder & cumin
3/4 cups of water
6 whole wheat tortillas

toppings:ice burg lettuce,scallions chopped,ripe tomato chopped,oil free salsa(can use homemade too).

Place beans in saucepan,mash with potato masher.Add cooked rice,spices and water.Heat 5-10 minutes.Prepare vegetables.Heat tortillas quickly to just soften them.Apply beans,vegetables,toppings and salsa.Roll and serve immediately.cheese or soy cheese can be used as a topping.

I planned to make this recipe and I goofed and soaked the wrong beans. So, I went ahead and made it with black beans. It was very good. Thanks for the recipe.

black beans are good too. I grew up eating beans and rice daily. makes me want to talk to my mommy. (she has been on vacation for a month)
