2 Tbs olive oil
2 Tbs balsamic vinegar
4 ripe tomatoes, sliced
3 Tbs mayo
1/2 tsp parsley
1/4 tsp oregano
1/4 tsp pepper
3 Tbs grated parmesan cheese, divided
4 slices bread, lightly toasted

Preheat oven to broil.

Whisk olive oil and vinegar.
Marinate the tomatoes in the mix,stir occasionally.

Mix mayo,parsley,oregano,pepper and 4 tsp parmesan cheese.
Spread mixture on each slice of toasted bread.
Place marinated tomatoes on 2 slices and sprinkle with remaining Parmesan cheese.
Put on a baking sheet and broil for 5 min,til cheese turns golden brown.
Serve immediately, open faced or closed.

Trudy - you even "fancy up" 'mater samwiches!!!!! Mine are White Bread, Mayo, Garlic Salt and of course home grown 'maters!!!!! But I do love them. Now I am going to have to try yours which of course sound divine!!!!! You are giving Paula Dean a run for her money!!!!

Sounds Yummy!

I made a quick one today with wheat bread, tomato,a little dab of miracle whip,lettuce and a slice of swiss cheese.

Thank goodness my neighbor always plants way too many tomato plants

We have one but the darn things are still super green, I am getting worried they will never ripen.
