Default Split Pea Soup

Really sticks to your ribs, really tasty, high fiber. Easy to make. I got this off of All Recipes. I had the recipe scaled to 4 servings from 8.

1 1/2 teaspoons olive oil
1 c chopped onion
1 cup chopped carrot
1 cup finely chopped celery
3/4 teaspoon minced garlic
1/2 c yellow split peas
1/2 cup green split peas
4 cups fat-free vegetable broth (I used fat-free and low sodium)
3/4 teaspoon salt-free seasoning blend (I made my own)
1/2 teaspoon salt (I omitted)

1) In large pot or Dutch oven over medium heat - heat olive oil. Cook onion, carrot, celery and garlic until the onion is translucent.

2) Stir in yellow and green split peas, broth, seasoning and salt.

3)Cover, bring to a boil, then reduce heat and simmer 2 1/2 hours, stirring frequently.

4) Puree with a blender or food processor

5) Return to pot, heat through and serve.

I make split pea soup often in the winter. Even my picky 5 year old will eat this!! My recipe is a bit simpler, as I only use green peas...a bag of dried ones and then I don't puree' it, as it usually does this itself while cooking! YUMMY.

This is a real staple from around here!
We make it a bit different:

Boil a ham bone in lots of water in a big pot
add a bag of dried peas, chopped potato,carrot and turnip
simmer all day
Make dough balls and drop on top and keep the lid closed until dougballs are cooked
OMG!
I have to make this today!!LOL!!

Wow this sounds so good! I am going to make it for dinner tonight! I have been changing over to a vegetarian lifestyle for a little while now, and I have to say I feel so much better!

your recipe was a big success in our home. My hubby dislikes peas. He has been really good about trying new things. He loved the soup. Yeah!!! Thanks a bunch.
