This is a very simple casserole that my baby has loved since she was 12mos and it is one of the only ways I get her to eat some vegies. Also I love it and my husband does as well. It is good for breakfast or luch or dinner, it can work well at any time.

4 eggs
1/2 cup oil, I use a little less
3 cups grated zucchini
1/2 cup grated cheddar cheese
2 tbls. grated onion
2 tbls. parsely
1 cup Bisquick
salt to taste

Mix all ingredients bake in 350 degree oven until golden brown. In MA, it took, 45 min to an hour, in CO it takes a half-hour, I don't know.
