This is a lot like a vegetarian taco soup. It was very easy and extremely fast.

1 small onion, chopped
1/2 t. vegetable oil
1 can black beans, drained
1 can diced tomatoes
1 can chicken broth
1 can cannellini or white kidney beans, drained
3/4 c. fresh or frozen corn
2 garlic cloves, minced
3/4 t. cumin
3/4 t. chili powder
several dashes of bottled hot pepper sauce
tortilla chips
shredded cheddar cheese
sour cream

In a soup pot, saute the onion in oil until tender. Stir in the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered for 5 minutes or until heated through. Serve with tortilla chips, shredded cheese, and sour cream. Makes 6 servings.
