My oldest is an extremely picky eater! Thanks to my wonderful SS (othermomma) I got a wonderful cookbook from B&N that's full of kid-friendly recipes. I tried this one because she loves peanut butter, but I wasn't sure if she'd eat it because it has some asian/thai flavors, but she actually asked for SECONDS!! The best thing about recipe is that it's super quick and easy to make, and I also normally have all the ingredients on hand. It's just as easy as mac-n-cheese, but better for you!
Peanutty Peas & Noodles
From the cookbook "Better than Peanut Butter & Jelly" (no, not all the recipes have PB in them)
*The leftovers are also really good cold, and would make an easy-to-pack lunch!*
8 oz whole wheat spaghetti (I used what I had on hand, which was linguine)
1/3 cup natural peanut butter
1/2 cup hot water
1 tbs rice vinegar
2 tbs safflower oil (I used canola)
1 tsp reduced-sodium soy sauce
1 tsp lemon juice
Dash garlic powder
1/2 cup frozen peas, thawed (or sub your child's favorite vegetable--I'd think that broccoli or carrots would be really good, green beans too probably, and possibly even asparagus)
Cook spaghetti according to package directions. While spaghetti is cooking, combine peanut butter and hot water in a small bowl. Whisk until smooth. Add remaining ingredients, except peas, and stir well. Toss spaghetti with peanut butter sauce, add peas, and serve.
Serves 3.
