I found and have been using an excellent site that has step by step instructions on canning/preserving. They also include recipes if you don't already have one in mind. Other links on the site are very informative on gardening in general.

Great site BUT now I think my green beans are no good. My MIL told me I could warm bath can them and I did and this site says that's a no no.
