I spent the past 8 hrs doing this:

I made 4 loaves (2 batches) of Zucchini Bread. I used 6 Zukes and put enough shredded zucchini in the freezer to make 4 more. I got the zucchini from my garden.

I made 2 loaves of Banana Bread from a recipe I got from Mommysavers - it has Sour Cream in the ingredients - never made one like that. I also made 2 loaves of Beer Bread from a recipe I saw on Mommysavers.

I am taking all the breads on vacation to share with our friends we will be camping with.

I ran 2 bushels of Roma Tomatoes through the Victorio Strainer - it removes all the skins and seeds. I put all the juice and pulp in containers in the freezer. I am going to use it to make spaghetti sauce and can it when I get back from my vacation.

As soon as I am done eating my bowl of peanut butter ice cream I am going to can a batch of Salsa and hot peppers.... and then I will be done for today!

My garden is still producing peppers and tomatoes... about twice as many as we pulled off so far.... I am going to be busy for a while canning all this stuff.

I need to get busy and move forward too.

I FINALLY got my pickle situation figured out (THANK YOU ALL HERE FOR THE HELP!! ). I made 5 pints of 7 pints of pickles. My first ever, so we will need to see if everyone lives after eating them in a few weeks ~ (luckily I don't like pickles )

I have tons of tomatoes that are ready to ripen up, and a bunch more a neighbor gave to me so I need to figure out how to do those now. I think I am gonna just do them up in spag. sauce and freeze it this winter.

My zucchini's are great - I have shredded up about 12 batches of bread to make, and have a few more still coming.

I picked my FIRST sweet corn ears yesterday! :Happy Dance: The variety I planted wasn't very sweet or the best in the heat (I just picked a packet up at the Garden Center). The farmer down the street said that it didn't get enough water once the ears started growing.....

Little note I never knew: The silks you pull from the corn ~ each silk goes to an individual kernel bringing it water. That's what helps the kernels to form and plump up.

....anyway - the farmer is gonna give me some of the seed he plants in the fields next year so I don't have to worry about the water issues. It's made so that it doesn't need as much water and grows plump and sweet for the stores. BUT ~ we had MY sweet corn for dinner. That's what DH was the most excited about.

Today (Sunday) I am making and freezing spaghetti sauce. I'll let you know how much I get.

I think DH ruined the salsa we made
When I went to bed at 10:30pm it was just starting to boil. I told him to keep stirring it, turn the heat down and simmer some of the extra water out.

I woke up at 1am he was just filling the jars. My DS told me this AM that DH fell asleep on the couch and the salsa burned.

I got home from work at 1pm, the pan with the burnt salsa was till on the stove - he didn't even bother to soak it! I have the huge mess yet to clean up before I can start canning the peppers.

I am making salsa today or thought I was. I don't have enough hot pepprs. I don't have enough vinegar after making pickels a couple weeks ago and I don't have cilantro. Ughhhhhh, could I have planned it better.

I am trying to cut up what I can and find a farmers market tomorrow. I have been calling friends with gardens and leaving pleas for peppers.
