Default Storing/Freezing Tomatoes Tip/Recipe needed

I just learned that you can freeze your abundance of tomatoes WHOLE!!
I have soooooooo many and just not enough time to make sauces, etc. so I am so happy to know this!!
If anyone has a spag. sauce recipe they'd like to share, I'd love to have it!! I've never made it before, but I better start with all these tomatoes. Also a few of my vines have died with tomatoes on them, so I am making fried green tomatoes.

I just posted my spaghetti sauce recipe in the dinner section of the cooking forum.

I often freeze this recipe when I make it though this time I decided to can it. I'm curious to see how the canned jars turned out!

I ran all my tomatoes through the Victorio Strainer (it removes the skins and seeds) and froze them. WHen I come back from vacation next week I'm going to make spaghetti sauce. I'll have to check out your recipe melsb

Core them and put them on freezer bags OR Core them, soak in boiling water, slip the skins off then freeze them. I just made salsa and spaghetti sauce last week from last years tomatoes and peppers.

On Martha Stewart a while back she used frozen cherry tomotoes (peels and all) to make a frozen Bloody Mary. She just pureed them like you would ice in a blender and added the other ingredients. Looked pretty tasty I might add!

If you want to remove skins, how long do you leave them in the boiling water???

Not very long (a couple minutes).......just until the skin starts peeling off. If I have alot of tomatoes I put them in the sink and pour boiling water over them then pull the drain when they start to peel so the tomatoes don't cook.

I didn't know that either, so I must have left them in there at least 15 minutes!
I cored them when cooled and put them in the sauce. I didn't think about the seeds!
But my sauce came out EXCELLENT!! I've got fresh parsley and basil in my garden so using that I think helped alot! I had leftover buttered noodles from dinner so I mixed them w/some sauce for my lunch at work tomorrow. I told my mom I wish I could email her the smell as it was as good as prego and I'm a HUGE prego fan. I don't know how I did it!! lol YAY ME!!
