Growing up, my next door neighbor (RIP) always said to plant potatoes right after St. Patricks Day. And that is pretty much what we've always done. Though I am late this year and there is no way that my potatoes are going to be in the ground until next week.

But potatoes are pretty easy to grow and I'm not just saying that because I'm from Idaho! I'm from Northern Idaho where we only have one potato farmer in the entire county! But they are very easy to grow. Last year I even grew BLUE potatoes! They didn't get very big and dang they were pretty!

Anyway, here is an article from Mother Earth News regarding potato growing.

When and How to Plant Potatoes

Thanks - I've been wanting to try growing potatoes this year. I used to feel they were so cheap to buy in the store, that it's not worth the trouble - but nothing is cheap anymore.

So you can just plant the piece of potato that you've let sit out for a week in a normal gardening bed and they'll grow?

I really would love to grow potatoes -- I didn't realize they were so easy to grow!

They are very easy! I'm cutting up my potatoes tonight -- surely it will stop snowing eventually. Just make sure when you cut them that there is an "eye" in each part that you cut.

I just chop them up and let them set about 48 hours in a bowl in my kitchen. They just kind of dry out in the parts that you cut open.
