Default Amaranth -- Something I want to grow this year

This is something that I plan to plant along the back edge of our property this year. There isn't a regular fence there and this will grow high enough so the neighbors aren't looking into our back yard. Plus, it's really pretty and evidently you can eat it as well -- though I'm not sure if I'm capable of harvesting it. Not to mention (if I actually manage to somehow harvest it) that it has a lot of nutrients!

Wikipedia has a picture of amaranth if you actually want to look at it. But remember that is only one type of amaranth and there evidently is 60 different varities.
