Default Growing Cilantro?

Last year I had one little cilantro plant that quickly turned to coriander seed in the heat. It obviously dropped the seeds in the garden because it came back with a vengence this year and I have three huge plants. They have flowered and have very little actual usable cilantro leaves so I'm assuming this is what it does before it seeds. Is that right? Should I let it go or cut it back?

I cut it back then later towards the end of summer, I let them go and flower to reseed themselves. It is tough to stay on top of though. It wants to bloom very quickly.
