Name: Claire
Age:  36
Home: Crestview, FL

Family's Names and Ages:
Chris (41)
Stephen (6)
Matthew (3 1/2)
Laura (22 months)
Peppy (14 year old Sheltie)

Occupation:
I worked in economic development before I stayed home when my oldest was born.

If I had a day to myself...:
I would love to go shopping on my own and get a facial or a pedicure!  (I actually got to do this for an early Valentine's present last weekend!  It was heaven!)

Money Saving Tips:
I shop out of season.  Right now, I am stocking up at the stores for next winter.  I have gotten some really good deals on winter coats this way.  I usually buy at the Osh Kosh outlet for coats and have never paid more than $15 for one.  I even have snow pants (like I will use them in Florida!) because it is cheaper to buy the snow suit on clearance than the winter coat.  Go figure!

I also menu plan.  It saves us a bundle when I go shopping at the store because it keeps me from overspending and also helps me keep a better idea of what we are eating.

Bargain Hunting Strategies:
I like to go to outlet stores, JCPenneys, and Sears to look for clothes on clearance and also Target for clothes and household items.  E-bay is another place I have discovered has really good deals on designer clothes for myself and my children.  I have also ordered clothes from
landsend.com, gap.com, kohls.com and healthtex.com for next to nothing on clearance!  You just have to be patient and wait!

Products we can't live without:
SALSA!  We buy fresh (not the jarred stuff) salsa at Sam's by the gallon.

In the Kitchen:
I am on Weight Watchers so everything in my kitchen has to be semi-healthy and I am trying to teach my children how to make healthy choices at an early age so they can avoid some of my mistakes concerning nutrition.  We still like our sweets though!  One of our favorite recipes is for Pumpkin Spice Cake (or muffins) and it is super easy!!

Pumpkin Spice Cake
1 package Spice Cake Mix
1/4 cup water
14.5 ounce canned pumpkin

Preheat the oven to 350 degrees.  Mix all ingredients together in a bowl.  Spray a 9 x 13 pan with cooking spray.  Pour into the pan and cook for 30 minutes.  It makes 12 servings (3 points per serving on WW) and can also be made into muffins.

This cake also freezes very well if you don't want to be tempted with leftovers.  My kids love it and it makes my kitchen smell really nice, too.

Organization:
I keep a folding file folder by my telephone where I put all my receipts and bills by month.  That way I know when to pay them, where they are and what I have spent.  This has really helped me in my budgeting efforts and has saved us a bit of money, too by keeping everything in one place where I can see right away where our money goes.
