Taco Meat Leftovers: Rice Bake

Taco Bake Leftovers

So, what do you do when you have a little bit of taco meat leftover from your meal?  Don’t let it go to waste!  I created a new meal from my taco meat.

Taco Meat Leftovers: Rice Bake

2 C. rice, cooked
1/2 C. taco filling
1/2 C. kidney beans  (or more, depending on your taste)
1/2 C. corn (or more, depending on your taste)
1/2 C. sour cream
Cheddar cheese (use as a topping)

Combine all the ingredients above in a 2-quart casserole.  Top with Cheddar cheese and either microwave or put in the oven until heated through.  Enjoy!

Other ideas to use leftover taco meat:  Use as a pizza topping, mix with re-fried beans to make enchiladas, use in taco salads, use as a potato topper with Cheddar cheese and sour cream, mix with tater tots and top with Cheddar cheese.
