Egg White Bites (Easy, Grab & Go Breakfast)

egg white bitesEgg White Bites are a healthy breakfast food that the whole family will enjoy. They are easy-to-make and the perfect grab-n-go breakfast item for those busy weekday mornings. You can make these the night before and just pop them in the microwave for a few seconds to reheat.

Egg White Bites

  • 1 carton Egg Beaters, 100% egg whites (large enough carton to get about 24 Tbsp. out of)
  • Small bag of baby spinach, chopped or torn into pieces
  • 1/3 cup white onion, diced
  • 1/2 red bell pepper, diced
  • Olive oil cooking spray
  • Black pepper for seasoning
  • Optional: 1 pkg (2.5 oz) Great Value Real Bacon Pieces

egg white bitesStep 1: Preheat oven to 350°. Spray mini muffin pan with the olive oil cooking spray.

Step 2: Chop or tear the baby spinach leaves into pieces so they fit better in the bottom of each muffin cup. Now place them in the bottom of each cup.

egg white bitesStep 3: Dice up 1/3 cup of white onion and also dice up half of a red bell pepper.

egg white bitesStep 4: Now divide up the diced onion and pepper between the mini muffin cups.

egg white bitesStep 5: At this point if you want you can add some bacon pieces to all or a few of the muffin cups. (I added bacon pieces to half of the muffin cups).

egg white bitesStep 6: Fill each muffin cup with the 100% egg whites, filling them just till the top of each cup.

egg white bitesStep 7: Sprinkle each muffin cup with some black pepper.

egg white bitesStep 8: Put in the oven and bake for 10 minutes and no longer, otherwise they will start to brown.

*Note: If you want to you can add other vegetables to these egg white bites. You can also serve them with some low-fat sour cream or clean eating salsa.
