Herb Roasted Potatoes (Clean Eating)

Clean Eating Herb Roasted PotatoesHerb Roasted Potatoes are simple, satisfying and full of clean ingredients such as olive oil, garlic and lots of flavorful herbs that make it clean eating at its best.

Herb Roasted Potatoes

  • 6 medium-sized russet potatoes, 1″ cubed
  • 1 clove garlic, minced (omitted from picture)
  • 1/2 cup red onion, diced
  • 1 tsp. dried parsley
  • 1 tsp. dried thyme
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/4 tsp. black pepper
  • 2 Tbsp. olive oil (extra if needed)
  • Olive oil baking spray

herb roasted potatoesPreheat oven to 350° and spray 13×9 baking dish with olive oil baking spray.

Wash and cube the potatoes into 1″ chunks, peel and mince the clove of garlic and peel and dice up the onion.

herb roasted potatoesPut the potato chunks, minced garlic and diced onion in a large bowl and mix well.

herb roasted potatoesIn a small bowl combine the herbs, olive oil and black pepper and mix well.

herb roasted potatoesPour the mixed herbs, olive oil and black pepper mixture over the mixed veggies in the large bowl. Mix well and pour into the sprayed 13×9 baking dish.

herb roasted potatoesPut the baking dish into the oven and bake for 30-45 minutes or until potatoes are tender. Make sure to stir the potatoes occasionally so they all get done.
