This homemade oatmeal raisin cookie recipe is simple, easy, and frugal. I like to chop the raisins a bit so they're extra soft and chewy.
Homemade Oatmeal Raisin cookies
3/4 C. butter, softened
3/4 C. white sugar
3/4 C. brown sugar, packed
2 eggs
1 tsp. vanilla
1 1/4 C. all-purpose flour
1 tsp. baking soda
3/4 tsp. cinnamon
1/2 tsp. salt
2 3/4 C. oats, original (not quick oats)
1 C. raisins, chopped
Preheat oven to 375 degrees. Combine butter and sugar until creamy. Add eggs and vanilla and beat well. Add flour, soda, cinnamon, and salt. Stir. Next, fold in oats and raisins. Roll into 1″ balls and bake for 8-10 minutes. Cool.
