Swai with Lemon Butter

Swai with Lemon Butter

Swai fillets are a mild, inexpensive fish that is readily available in most grocery store freezer sections.  This recipe is done in 30 minutes or less from start to finish.  Want to kick it up a notch?  Experiment with other herbs and seasonings like lemon pepper, cilantro, parsley, or thyme.

Swai with Lemon Butter

4 swai fillets
2 Tbsp. butter
2 Tbsp. olive oil
1 Tbsp. lemon juice
1 tsp. garlic powder
1 tsp. paprika

Preheat oven to 350 degrees.  In a saucepan, combine olive oil, butter, lemon juice and garlic powder. Heat, stirring, until butter has melted. Drizzle over swai fillets. Sprinkle with paprika. Bake for 10-12 minutes or until fish is done and flaky, but do not overcook.
