This bbq chicken in the Crock Pot recipe not only includes mouth-matering chicken, but an entire meal to go along with it. Just prep, set, and go. Six hours later, your entire meal is cooked to perfection. It's absolutely perfect for busy holiday nights!
BBQ Chicken in the Crock Pot
Here's what you'll need:
- 6-qt. crock pot
- 4 chicken thighs
- 1/2 C. BBQ sauce (whichever your family loves best)
- 4-6 russet potatoes
- coarse kosher salt
- 1-lb. baby carrots
- 2 Tbsp. unsalted butter
- 1/4 C. brown sugar
- Reynolds Crock Pot Liners (optional)
Here's How:
Step 1:
Place chicken on the bottom of the crock pot. I use Reynolds crock pot liners for easy clean up. Pour BBQ sauce on top of every piece of chicken. Top with sheet of tin foil (I used Reynolds nonstick tin foil).
Step 2:
Make thin, shallow cuts lengthwise on the potato.
Step 3:
Sprinkle the kosher sale on the potato then wrap tightly in tin foil. Place on top of tin foil square.
Step 4:
Place 1 lb. of baby carrots in center of tin foil. Top with 2 Tbsp. of unsalted butter and sprinkle 1/4 C. of brown sugar. Close tin foil loosely around carrots. Place on top of potatoes.
Step 5:
Cover with lid, cook on low for 6-7 hours. Check potatoes with a fork to see if done.
Entire meal: BBQ chicken, potato, and sweet carrots, all in one crock pot.
You're left with a beautifully cooked potato, sweet carrots, and BBQ chicken just waiting for you to get home and eat. Seriously, it's too easy.
