Get ready to savor the delicious combination of sausage, vegetables, and seasonings, all cooked to perfection in a cozy campfire packet.

Ingredients:

  • 4 large eggs
  • 4 sausages (pork, chicken, or turkey), sliced
  • 1 bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 small potatoes, thinly sliced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh herbs (such as parsley or chives) for garnish

Instructions:

  1. Prepare your campfire by building a medium-sized fire with a steady flame. Allow the fire to burn down until you have a bed of hot coals.
  2. Tear off four large pieces of heavy-duty aluminum foil, each about 12×12 inches in size. This will be used to create individual packets for each serving.
  3. In a small bowl, whisk the eggs and season with salt and pepper. Set aside.
  4. Place a portion of sliced sausages, bell peppers, onions, and potatoes in the center of each aluminum foil sheet. Drizzle the ingredients with olive oil and sprinkle with salt and pepper.
  5. Carefully fold the foil over the ingredients, sealing the edges tightly to create a packet. Be sure to leave a little space for steam to circulate inside.
  6. Place the packets on the hot coals of the campfire, ensuring they are not directly over the flames. Cook for approximately 15-20 minutes, or until the potatoes are tender and the sausages are cooked through. Rotate the packets occasionally for even cooking.
  7. Carefully remove the packets from the fire using tongs or heat-resistant gloves. Allow them to cool slightly before opening.
  8. Open the foil packets, being cautious of the hot steam. Pour a portion of the whisked eggs into each packet, distributing evenly over the cooked ingredients.
  9. Return the opened packets to the campfire, placing them back on the hot coals. Cook for an additional 3-5 minutes, or until the eggs are set and cooked to your desired consistency.
  10. Remove the packets from the fire and carefully transfer the contents onto plates. Garnish with fresh herbs for added flavor and presentation.
  11. Serve the savory sausage and veggie delight packets hot and enjoy the satisfying flavors of a campfire-cooked breakfast.
