Freezer Wednesday Again!

My freezer meals have saved my life this past week. I’ve pulled three meals from the freezer already; when my husband was sick,  when I was sick, and when my son had a terrible allergic reaction to peanuts (I shared my story on our forums, there is an amazing support group of women on MommySavers). But we’re staying on track for our spending freeze with Forget the Joneses.

This week I made these freezer meals:
– Homemade Meatballs
– Spaghetti Pie

The homemade meatballs required little to no additional prep, they went from freezer to table in 15 minutes. I just tossed a few into spaghetti sauce and cooked the noodles. The spaghetti pies did require 45 minutes of baking from the freezer but no real prep except to toss some mozzarella cheese on them.

    What do you have to do when you take it out of the freezer? Do you have to completely defrost or bake it longer?

      Nope, just pop it in the oven at 350 degrees for 30 minutes then layer 1/4 cup of mozzarella cheese and bake for an additional 15 minutes.

    Thanks so much for doing this! I am on a mission to fill up my freezer with easy to make meals so that I am not tempted to stop and get dinner on my way home from work. I am always looking for some great recipes to try, so thanks again!

    This is something I need to look into doing in the coming weeks since I am 28 weeks pregnant and will not want to cook as much in the later parts of pregnancy, not to mention after baby is first born. And the spaghetti pie has me drooling…it looks so good. I need to get some pie pans though. 🙁

    Im going to try this! Thank you for the ideas! Keep em coming. Last nite, we got home so late….I looked to cereal for dinner.. hahahaha Who says you cant feed your kid cereal for dinner?! 🙂

    Spaghetti pie was a hit at our house. My husband even asked for the leftovers for his lunch.
    This will definately be a regular freezer meal.
