Easy Goat Cheese Cranberry Salad
Here’s an easy, delicious salad that’s actually good for you! It’s high in fiber (cranraisins), and high in calcium. Plus, goat cheese has fewer calories than cow’s milk cheeses and is considered a healthy fat. It’s perfect for entertaining, as a side with dinner, or for a healthy lunch. Add a bit of grilled chicken on top to make it a meal by itself.
What you’ll need:
- Heart of romaine lettuce (or spinach leaves)
- Almond slices
- Cranraisins
- Goat cheese crumbles
- Raspberry vinaigrette dressing
Here’s how:
In a large bowl combine greens, 2 tablespoons each of the almond slices, cranraisins, goat cheese crumbles, and raspberry vinaigrette. Toss thoroughly. Enjoy!
