Holiday Treats: Chocolate-Covered Cherry Mice

chocolate covered cherry christmas mouseHow cute are these chocolate-covered Christmas mice?  Simply adorable!  The photo doesn’t do them justice.  I can’t take credit for them — they’re a treat my friend made.  I was just lucky enough to get one!  Here’s how to make them:

Chocolate-Covered Christmas Mice

Hershey’s chocolate kisses
Maraschino cherries, rinsed and dried
Slivered almonds
Oreos, halved
6 ounces semisweet chocolate
1/2 tsp butter
1 ounce paraffin, chopped
Red gel icing
Green gel icing

In a double boiler, melt semisweet chocolate, butter and paraffin. Stir until smooth. Dip cherries in melted chocolate, completely covering the cherry stem. Place on an Oreo cookie half. Press on the Hershey’s kiss to form the mouse’s head. Before the chocolate has set, wedge two sliced almonds between the Hershey’s kiss and the cherry to form the mouse’s ears. Use the red gel icing for the mouse’s eyes, and green and red icing to create holly berries on the side of the cookie.  Refrigerate to firmly set the chocolate.

    Any ideas for a substitute for the almond slices for the ears? Would love to
    make these for my son’s holiday party at school but not sure about the nut allergy factor?

    You could substitute butterscotch chips for the ears and use them for feet as well.
