If you ever visit Chicago, you can’t leave without trying one of their authentic Italian Beef Sandwiches. They’re like none other! This crock pot version is a relatively close copy. It only requires five ingredients, which makes it an easy dinner on a busy night. Just set your crock pot to low in the morning before you leave for work and school. Don’t skip the Giardiniera veggies – they’re what gives these sandwiches their kick!
Italian Beef Sandwiches in the Crock Pot
3-4 lbs. beef rump roast
1 packet Italian dressing mix (such as Good Seasons)
1 jar Giardiniera veggies
1/2 16-oz. jar sliced pepperoncini peppers WITH their liquid
1 C. beef broth
Rub the roast with Italian dressing. Pour the liquids and veggies over it, and cook on low for 6-8 hours. We serve on hoagie rolls with a slice or two of Provolone cheese.
