Marshmallow Peeps Sunflower Cake

Want to impress your Easter guests? This Marshmallow Peeps Sunflower Cake is not only easy to make, it’s cute to boot.  It’s pretty much no-fail.  Even novice bakers can master this one.

Marshmallow Peeps Sunflower Cake

Supplies Needed:

One box chocolate cake mix
Chocolate frosting (recipe below)
12 yellow Marshmallow Peeps
Two 8-inch cake pans
1/2 bag mini chocolate chips

Marshmallow Peeps Sunflower Cake Frosting:

3/4 C. butter
2 C. powdered sugar
1 C. chocolate syrup
1/3 c. unsweetened cocoa
3 Tbsp. milk
1 tsp. vanilla

Bake the chocolate cake in two 8″ rounds according to package directions (I dust my cake pans with flour so the cake is easily removed).  Cool completely.

Slice the rounded part of the cakes off with a bread knife to give them a flat surface.  Frost the bottom layer with frosting.  Add the top layer and frost the entire cake.  Arrange the Marshmallow Peeps around the perimeter of the cake.  In the center, sprinkle the mini chocolate chips.
