Freezer-Friendly Spaghetti Pie Recipe

January 12, 2011 by Kimberly Danger 11 Comments

This is another fabulous freezer friendly recipe that my friend Melissa (whom I still call Missy in my mind, comes from being childhood friends) shared with me. Got to say that it is surprisingly delicious. All the Soldiers at my husband’s office today absolutely loved it! Check out my candid camera shots at the end.

This recipe makes three pies, you could use one for supper and freeze the other two.

Sauce:
2 ½ lbs ground chuck, browned
1-2 cups of sweet onions
1 jar of Ragu sauce
1 cup of brown sugar
2-3 cloves of garlic
-OR-
2 ½ lbs ground chuck, browned
1-2 cups of sweet onions
2 16 oz. cans tomato sauce
2 6 oz. cans tomato paste
2 teaspoons sugar
½ cup water
1 Tablespoon oregano
1 Tablespoon basil
1 Tablespoon salt
1 Tablespoon garlic

Crust:
12 oz spaghetti cooked
½ cup butter
1 cup Parmesan cheese
3 beaten eggs

Other layers:
2 cups of sour cream
1 1/2 cups of mozzarella cheese

Preparation:

Brown hamburger meat and chopped onions until meat is thoroughly cooked.

Add sauce and simmer for at least an hour.

Once sauce is simmering cook spaghetti per package directions. Drain noodles.

Mix hot noodles, butter, and Parmesan cheese together. Let cool completely. (I put the pot in the garage)

Once spaghetti mixed with Parmesan cheese and butter is completely cooled, mix in the three beaten eggs.

Spoon spaghetti mixture into three greased pie plates.

Spread 2/3 cups of sour cream on each pie

Spoon sauce onto all three pies (if you plan on freezing the pies, put tin foil over the pie plates and put in freezer).

If you aren’t freezing the pies, bake at 350 for 30 minutes.

Pull pies out and spread 1/2 cup of mozzarella cheese, bake for 15 more minutes.

Let sit for 10 minutes before cutting.

Bon Appetit!

Have you tried this recipe with chicken? I have some left over from freezer cooking that I did this weekend and was looking for something to use it in. Any feedback would be great! It does look yummy though! Thanks

I wish I would have got some meat out of the freezer because this sounds yummy! I will cut it down to a smaller portion because our freezer (and my cooking supplies) isn’t big enough!

Natalie, no I haven’t used chicken for this recipe. If you try it though, let us know how it went!

If you do freeze the pies, how long to cook? or do we need to thaw first?

It’s the same. I cooked them from the freezer at 350 degrees for 30 minutes, added cheese then baked for 15 minutes.

Is there really only one jar of Ragu sauce? The recipe says one, but there’s 2 in the picture. 1 jar doesn’t seem like very much for 2 1/2 pounds of meat.
