Healthy Tuna Recipes:  Tuna Salad Niçoise

When most people think of tuna salad, they think of a fat-laden dish with loads of mayo, celery, onions – and possibly some noodles.  There’s no doubt those salads are tasty. I love them myself!  However, you can create a healthy tuna recipe that’s just as flavorful.  This one packed with tons of protein and veggies… and so yummy you don’t realize it’s good for you!

I first had Tuna Salad Niçoise on a trip to Europe in my early 20s.  I had never seen it on any menu before, but it was pretty common over there.   It’s even on the menu in pubs and bars. It quickly became one of my go-to salads.  According to Wikipedia, authentic Tuna Salad Niçoise, which literally means salad “in the style of Nice, France” doesn’t have the potatoes and green beans.  Apparently those ingredients came into play when Julia Child “Americanized” the recipe.

Anchovy Vinaigrette Salad Dressing

1 clove garlic
1/3 C. olive oil
2 Tbsp. lemon juice
1 Tbsp. Dijon mustard
1 shallot, minced
1-2 anchovy filets, mashed (Don’t skip these.  They’re PACKED with flavor!)
Kosher salt, to taste
Freshly ground black pepper, to taste

Whisk all ingredients together to emulsify.

Niçoise Salad Ingredients

1 lb. small new potatoes, boiled until tender (I bring to the boil and reduce heat to a simmer for about 10-15 minutes)
8 oz. green beans, blanched
12 oz. cherry tomatoes, halved
1/2 C. black olives
4 hard-boiled eggs, quartered
2 cans Ocean Naturals canned tuna, drained

Plate all the salad ingredients separately and the dressing on the side. I think this method is so much more visually appealing.  This recipe serves 4-6.
