Want a quick supper that doesn’t take a lot of time or prep but still tastes delicious? That seems like a tall order, but this recipe fits the bill! Black beans and quinoa up the protein content without adding to the cost. Sweet onion, bell pepper and Tabasco kick up the flavor up a notch or two. It all comes together and tastes great.
Healthy Tacos
- 1/2 lb. ground turkey
- 1 can black beans, drained and rinsed
- 1 sweet onion, sliced
- 1 orange or red bell pepper, sliced
- 1/2 quinoa, previously cooked (this is optional, omit if desired)
- 2 Tbsp. taco seasoning
- 1 tsp. cumin
- A few drops Tabasco sauce
Here’s how:
- Brown turkey meat with taco seasoning, cumin, and Tabasco
- Add onions, peppers and spices, cook until softened
- Add black beans and quinoa
- Top with cheese, lettuce, and your favorite fixings
