Low-Fat Chipotle Orzo Salad

low-fat chipotle orzo salad If you’ve been following my recipes on Pinterest, you may wonder if I ever cook anything low-fat.  I really do!  Here’s a new salad I came up with the other day.  It tastes great after a few hours of chilling, but it’s even better the second day, after the flavors blend through.

Low-Fat Chipotle Orzo Salad

Dressing Ingredients
1/3 C. chopped fresh cilantro
2/3 C. light sour cream or Greek yogurt
1 tsp. cumin
1 teaspoon sweet chipotle chili powder
1 Tbsp. fresh lime juice
1 Tbsp. balsamic vinegar
1/2 tsp. salt

Salad Ingredients
2 C. cooked orzo, chilled
1 can diced tomatoes
1/3 C. chopped red onion
2 green onions, sliced
1 (15-ounce) can black beans, rinsed and drained
1 (8 3/4-ounce) whole-kernel corn, rinsed and drained
2 avocados, chopped (add right before serving)

Combine the dressing ingredients, then pour dressing over salad ingredients.  Chill well before serving.  IIf you’re going to prepare this a day or so ahead, leave the avocado out and add it before serving, otherwise it will turn brown. Feel free to change the ingredients according to what you already have on hand at home.  Really, anything goes!
