Target Gourmet: Archer Farms Sausage, Pasta + Goat Cheese = FABULOUS!

archer farms spinach garlic sausage targetEver since our Target grocery department expanded a few months ago, I’ve been having fun trying some of their store exclusives.  Most recently, I tried the Archer Farms Spinach & Garlic Sausage.    I thought it was really good, but my husband (the sausage expert in the family) liked it even more than I did.  

I came up with this really quick-and-easy pasta toss recipe to go along with it.  While it’s not the most frugal meal you will serve, it’s not too bad (under $2.50 per serving).  Plus, it tastes like a real gourmet meal and is ready in less than 30 minutes.

Sausage with Pasta, Goat Cheese and Pine Nuts

  • 1 package Market Pantry spinach and garlic sausage (found at Target)
  • 1/2 bag Archer Farms pasta (I used Campanelle)
  • 2 cloves garlic, minced
  • 1 C. chopped fresh leaf spinach
  • 2 Tbsp. pine nuts
  • 3 Tbsp. extra virgin olive oil
  • Goat cheese (approx. 1/2 container) – Feta would also work nicely

Slice the sausage into bite-size pieces.  Mince garlic and chop spinach.  Meanwhile, prepare pasta according to package directions and heat olive oil in a skillet.

Saute the pine nuts until golden brown.  Add garlic and fresh chopped spinach, and heat until spinach is wilted.

Add the sausage and heat until the edges start to brown.

Serve immediately over pasta, and sprinkle with goat cheese.  Serves 4.

    I can almost smell the wonderful flavours from these. Great recipe and I’ll be sure to try it over the summer months (quite anxious to actually)
