Everyone in our house LOVES asparagus (with the exception of my 8-year-old son, who says he would rather kiss a toilet seat than eat it). So lately, I’ve been experimenting with new and unique ways of preparing it. The presentation of this Bacon-Wrapped Asparagus with Feta is so pretty and simple (not to mention delicious) it would be ideal to serve at a dinner party. It’s sure to impress your guests!
Bacon-Wrapped Asparagus with Feta
Asparagus bunch
Extra-virgin olive oil
Kosher salt
Bacon
Feta cheese
Cut the woody ends off the asparagus spears. Drizzle with extra-virgin olive oil and sprinkle with kosher salt. Wrap a bundle of 2-3 asparagus spears in a slice of bacon. Place on a jelly roll pan or cake pan that has been covered with aluminum foil for easy clean-up. Note: Make sure you use a tray or sheet with an edge to catch the bacon grease.
Roast the asparagus for 10-15 minutes at 450 degrees or until bacon starts to crisp. We have found that thick-cut bacon doesn’t work as well as thinly sliced bacon. Remove from the oven and sprinkle with feta cheese.
