BBQ Beef Pockets Recipe + Coupon Match-Up

A great use for pre-made BBQ meat like Lloyd’s, or leftover BBQ meat is to make it into BBQ Pockets. We made these with leftover roast and BBQ sauce the other day and they were so good! You could actually fill the dough with just about anything. We’ve done Mexican chicken with cheese, and pizza toppings, but the BBQ beef was my favorite.  The recipe serves 6, but freezes well.

4 cups flour
2 teaspoons baking powder
2 teaspoons salt
1 stick butter, cut up
1 cup cold water
1 egg beaten with a little water
Filling

Cut butter into dry ingredients.  Mix with cold water until dough comes together. Knead into two smooth balls. Roll 1/4″ thick and cut into 4 or 5 inch circles. Fill with 2 teaspoons filling.  Fold the dough in half over the filling, and crimp the edges.

Brush with egg and bake at 400° for 25-35 minutes.
