These days, I’m trying to eat healthy. Clean eating is the name of the game 80% of the time, but the one food I simply can’t give up is bacon. I mean, I could practically go vegan if bacon was allowed on that diet plan. It’s the one food I simply can’t resist. Bacon even finds its way into my summer salads. It’s not just for breakfast in my house!
Don’t let the “broccoli salad” part of the name fool you. This is not a health food. But, I promise you you’ll want to make this again. And AGAIN. There are all sorts of variations and other add-ins you can try: raisins, grapes, sunflower seeds – experiment with what you like. This is a great basic recipe that’s a great foundation for whatever tickles your fancy.
Broccoli Bacon Salad
2 heads broccoli crowns, cut into small pieces
1/2 red onion, finely chopped
1 3/4 cup mayonnaise
juice of one lemon
1/4 red wine vinegar
2 cups shredded cheddar cheese
8 slices bacon, cooled and crumbled
1 tsp. black pepper
I found this Wright Brand® Bacon at Walmart in several delicious-sounding flavor varieties (I chose the original smoked for this recipe, but have tried the Applewood too and enjoyed it). Notice that Wright Brand® is 24 oz. bacon – a great value compared to other brands of bacon you see.
Brown your bacon until crispy. Cool completely.
After your bacon has cooled completely, give it a good chop!
Red onions add tons of flavor. I used half of a large onion, but tweak according to your own taste.
Broccoli crowns – cut in small pieces.
This salad is a great side dish to accompany grilled meats or bring to potluck parties.
