In our house, bacon makes everything better. That’s why I took my mom’s basic cheesy hash brown potato recipe and added bacon to it. Yes, it turned out even BETTER with bacon! This definitely isn’t something you want to serve too often (it’s sinfully fatty) but it would be perfect to impress overnight guests for brunch.
Cheesy Hash Brown Potato Bake with Bacon
- 1 large bag hash brown potatoes (approx. 30-oz)
- 1 can cream of chicken soup
- 3/4 C. sour cream
- 2 C. grated cheddar cheese
- 1/2 C. onion
- 1/2 lb. bacon
- Pepper to taste
- 2 Tbsp. butter
- 1 C. crushed corn flakes cereal
In a large skillet, brown the bacon. Remove to drain but reserve the grease. Saute the onions in the bacon grease until translucent. Remove and drain. Once cool, crumble bacon into bits. Combine all remaining ingredients in a bowl (except the corn flakes and butter) with the bacon and onions and spread evenly in a large greased casserole dish. Sprinkle crushed corn flakes on top and drizzle with melted butter. Bake uncovered for one hour at 350 degrees.
